Ingredients (makes 2 sandwiches):

 

  • 4 slices bread (use gluten-free bread for GF option) 
  • 4 slices cheddar cheese (or vegan cheddar for vegan option)
  • 1/2 cup Rick’s Picks The People’s Pickle, sliced into thin rounds (about 6–8 spears)
  • 2 tbsp butter (or vegan butter)
  • 1 tbsp mayonnaise (or vegan mayo, optional for extra crispiness)
  • 1 tsp Dijon mustard (optional, for extra zing)
  • 1/4 cup arugula (optional, for a fresh twist)
Instructions:
  1. Prep the Pickles: Drain The People’s Pickle spears from the jar and slice them into thin rounds (about 1/8-inch thick) for maximum crunch. Pat dry with a paper towel to remove excess brine.
  2. Assemble the Sandwich: Spread a thin layer of butter (or vegan butter) on one side of each bread slice. On the unbuttered side of two slices, spread a thin layer of Dijon mustard (if using). Layer 2 slices of cheddar (or vegan cheddar), a handful of spinach or arugula (if using), and a generous layer of sliced People’s Pickle rounds (about 1/4 cup per sandwich). Top with another slice of cheese and the second slice of bread, buttered side up.
  3. Grill It: Heat a skillet or griddle over medium heat. For extra crispiness, spread a thin layer of mayo on the outside of the buttered bread just before cooking. Place sandwiches in the skillet and cook for 3–4 minutes per side, pressing gently with a spatula, until the bread is golden brown and the cheese is melty.
