- 2 tbsp butter (or vegan butter)
- 1 tbsp mayonnaise (or vegan mayo, optional for extra crispiness)
- 1 tsp Dijon mustard (optional, for extra zing)
- 1/4 cup arugula (optional, for a fresh twist)
- Prep the Pickles: Drain The People’s Pickle spears from the jar and slice them into thin rounds (about 1/8-inch thick) for maximum crunch. Pat dry with a paper towel to remove excess brine.
- Assemble the Sandwich: Spread a thin layer of butter (or vegan butter) on one side of each bread slice. On the unbuttered side of two slices, spread a thin layer of Dijon mustard (if using).
