Rick's Picks Pickle Watermelon Salad Recipe

Ingredients:

4 cups watermelon, cubed (seedless preferred)

1 cup pickles, finely chopped (Choose your favorite Rick's Picks pickle!)

1/4 cup fresh mint leaves, chopped

1/4 cup feta cheese, crumbled

2 tablespoons olive oil

1 tablespoon lime juice (freshly squeezed)

1 teaspoon honey

1/4 teaspoon black pepper

1/4 teaspoon sea salt

1/4 cup red onion, thinly sliced (optional for a sharp bite)

Instructions:

Prepare the Watermelon: Cut the watermelon into 1-inch cubes and place them in a large mixing bowl.

Add Pickles and Mint: Add the finely chopped Rick's Picks pickles and chopped mint leaves to the bowl with the watermelon.

(optional) Incorporate Feta and Onion: Sprinkle the crumbled feta cheese over the mixture. If using red onion, add the thinly sliced pieces for extra flavor.

Make the Dressing: In a small bowl, whisk together olive oil, lime juice, honey, black pepper, and sea salt until well combined.

Combine: Pour the dressing over the salad and gently toss to coat all ingredients evenly.
